I strongly believe there is no ONE nutrition plan that works for everyone. There is so much confusion surrounding what we should be eating. When you’re feeling unsure if you should eat something or not, the question you need to ask yourself is:
“Is what I am eating a nutrient-dense, whole food?”

Most importantly, know there is no one-size-fits-all approach to YOUR nutrition. We have different genes, different gene expression, different lifestyles, health issues, activity levels, and goals. All of these elements influence what an optimal approach might be, and these factors change over time. The only way to truly know what is best for you is experimentation. We will cover how to go about doing finding your optimal nutrition and offer you support and tips to make nutrition less overwhelming.
TRUTH: I STILL get overwhelmed by nutrition too, the constant evolution of science surrounding food, and I study this stuff. I get stressed and grab a cookie. Making ourselves aware of our habits is one step in moving closer to healthier eating. But a cookie now and then is what makes life more fun! We will find the balance between what nourishes your body, and what feeds your soul.
Healthier Chicken Salad
This chicken salad is made with Greek yogurt for added protein, Dijon mustard for flavor, and some other stuff that tastes good and makes your body feel good too. I am always up for making chicken salad with leftover chicken. Why? Let me share: 1. It usually tastes better the second day. 2. It’s a quick and easy lunch to have on hand. 3. Leftover chicken can sometimes be DRY. Like SAWDUST. But NOT this chicken salad. It’s creamy and delicious, without inflammatory seed oils. And #4. Because I LIKE IT!
Healthy Seed & Oat No-Bake Cookies
These healthy no bake cookies have healthy ingredients. Hemp seeds contain high levels of antioxidants, fatty acids, minerals, and vitamins. Whole grain oats offer antioxidants, soluble fiber, and are very filling. Nut butter contains healthy fats. Cacao powder is packed with flavonoids and good for lowering blood pressure & reducing insulin sensitivity.
Curry Chicken Salad
Here’s my recipe for not-so-lazy curry chicken salad. Put it on some crackers, a piece of toast, or just over arugula with lemon juice (personal fave.) If you don’t always make it from scratch, no judgment from me on banging down on that easy button. But when you need that avocado oil based mayo in your dish, get in the kitchen and start chopping!
Buffalo Chicken Soup
We still have a few snowy days up here in the Rockies in April and May. Yes, if you didn’t know, New Mexico is still the Rocky Mountain range. Today is one of those spring snowy days. On colder days, I simply want warm comfort foods. Hello instant pot! I love you. And hello spicy buffalo sauce! I love you, too. I think warming my insides makes my outsides feel warm too. This buffalo chicken soup is comfort food for my soul. I sure wish my kids liked spicy food as much as I do. But sour cream (I typically sub Greek yogurt) certainly helps! One day I’ll have them loving spicy foods that make your nose run and your eyes water. I mean, what’s not to love about that? Enjoy this warm comforting soup and let me know what you think!
Perfect Oven Roasted Veggies
Do you love roasted vegetables? ME TOO! I like to eat them FRESH to death or as leftovers for breakfast or lunch. EAT YOUR VEGGIES. Eat the rainbow. All the colors help you to get in a variety of nutrients. Try things you haven’t tried in a while, and maybe you’ll find it’s better than when you were a kid. We’re looking at you, Brussels.
Super Delicious Six-Minute Salmon
Here’s my favorite feel-good, lunch in a hurry, hot-cooked salmon special. Those Butcher Box salmon fillets come individually packed, which makes them crazy convenient. I take one out in the morning, and by lunch time she’s screaming, “sear me, Dodi!” And I obey.
A little salt and pepper, three minutes each side in a little oil, plated with veggies or salad, and BOOM! Lunch (or dinner) is served! Let me know if you grab this six-minute lunch special AND how much you loved it!!
Chicken Gnocchi Soup
Does anyone else go into Trader Joe’s and look for interesting looking ingredients that might force you to make a meal that’s new and different so your family will “Ooooh and Aaaaah” a little extra at dinnertime? Yeah, me too. Enter Trader Joes frozen gnocchi! I hopped into my google machine and off we went in search of something new and interesting.
Instant Pot Chicken Taco Chili
Here is another instant pot winner for dinner! I adapted this little booger from skinnytaste.com- thanks Gina! And my kids don’t complain. My husband is happy and so am I because it’s an easy, healthy win for ALL of us! I’m getting hungry just thinking about it!
