Super Delicious Six-Minute Salmon

I signed up for extra salmon every month at a price that’s much better than the grocery’s meat department, because you KNOW I preach eating cold water fatty fish THREE TIMES A WEEK BABY! Healthy heart and brain, we are coming for ya!
Here’s my favorite feel-good, lunch in a hurry, hot-cooked salmon special. Those Butcher Box salmon fillets come individually packed, which makes them crazy convenient. I take one out in the morning, and by lunch time she’s screaming, “sear me, Dodi!” And I obey.
A little salt and pepper, three minutes each side in a little oil, plated with veggies or salad, and BOOM! Lunch (or dinner) is served! Let me know if you grab this six-minute lunch special AND how much you loved it!!
Ingredients:
1 Salmon fillet
Cauliflower rice (microwave version is easiest)
Salt & Pepper
2 tsp avocado, coconut or olive oil
½ cup or more chopped kale
1 TBSP lemon or lime juice
Lemon Dill Sauce:
2 TBSP avocado oil mayo (I like Primal Kitchen)
1 TBSP lemon juice
½ tsp garlic salt
1 tsp fresh or dried dill
Instructions:
1. Salt salmon and add oil to a pan over medium high heat.
2. Place cauliflower rice in the microwave or cook in a pan over medium heat.
3. Cook salmon 3 minutes each side or until desired flakiness.
4. Add chopped kale to cauliflower rice in a pan and heat until bright green. Add salt and pepper to taste, plus lemon or lime juice.
5. Mix together all ingredients for lemon dill sauce until well blended.
6. Plate your veggies, salmon, and lemon dill on top, and ENJOY!
