Instant Pot Chicken Taco Chili

Here is another instant pot winner for dinner! I adapted this little booger from skinnytaste.com- thanks Gina! And my kids don’t complain. My husband is happy and so am I because it’s an easy, healthy win for ALL of us! I’m getting hungry just thinking about it and good news/bad news, I went to Cid’s in Taos yesterday and my fridge is STOCKED with goodness! Actually, that’s just good news. I met my friend Beth over there and she loves that store so much, every employee knew her name. And vise versa! One day my dream is to live within walking distance of the most delicious, farm fresh market and be able to pop over the day they get their fresh fish stocked. Is that weird? Yeah, I didn’t think so either.

Anywho… give this taco chili a try- you will LOVE it, your kids and husband will too. Don’t forget to douse it in cilantro and Tapatio, my friend!

 

INGREDIENTS

  • 1 tbsp olive oil

  • 1 small onion, chopped

  • 1 tsp minced garlic

  • 1 15.5 oz can black beans, not drained

  • 1 8-oz can tomato sauce

  • 10 oz package frozen corn kernels

  • 2 10 oz cans diced tomatoes w/chilies (Rotel)

  • 1.5-2 lbs boneless skinless chicken breasts

  • 4 oz can green chili peppers

  • Sneak in some kale, spinach, or any greens you like!

  • 1/4 cup chopped fresh cilantro

  • other toppings: greek yogurt, avocado, limes

*You can use pre-mixed taco seasoning or this:

  • 2 tablespoons cumin

  • 2 tablespoons chili powder

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon paprika

  • 1 teaspoon kosher salt

  • 1/2 teaspoon black pepper

 

INSTRUCTIONS

1.     Season both sides of the chicken with ½ of the taco seasoning.

2.     Press Saute on the instant pot and add olive oil and garlic, cooking until soft. Hit cancel.

3.     Add the chicken, beans, corn, chilies, diced tomatoes and tomato sauce.

4.     Add 3/4 cup water and the remaining taco seasoning and stir.

5.     Cook on high pressure for 25 minutes and allow for natural release. Shred your chicken breasts and return to pot. Stir well. Optional: Add sneaky greens and saute until wilted.

6.     Top with cilantro and any other desired toppings- ENJOY!
