Peach Blueberry Crisp

Just let me know when you’re tired of hearing about how much I love peaches, mmmkay? And you probably already know this, but not all peaches were created equal. The ranking goes like this: Palisade Peaches #1, the rest of the world’s peaches #2. You know how you don’t know what you’ve got until it’s gone? I feel that way about my access to those luscious, juicy, mouth-watering Palisade peaches. Luckily, I had a friend in Colorado and she picked up a batch for me and delivered it to us in New Mex! YAY! And also luckily, the Trader Joe’s peaches are pretty darn good too, so I got a fresh batch that I hope to stretch for the remainder of summer. Summer, don’t go!

This crisp is made with peaches, blueberries, and what some would consider a “paleo” crisp topping. Basically, that means it’s grain-free and made with natural sugar. The tartness of the blueberries mixes perfectly with the sweet peaches. I love baked fruit desserts so much! Top it off with some ice cream, or even all on it’s own, it’s a blue-ribbon winner of a dessert. Let me know if you try it. And if you come visit us from Colorado, BRING PEACHES!!! Ingredients

  • 4 peaches, sliced

  • 2/3 cup blueberries

  • 1/4 cup maple syrup (can sub honey)

  • 1 Tbsp lemon

  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon cinnamon

  • 1 tablespoon arrowroot flour (can sub tapioca)

For the crisp topping

  • 1/2 cup almond flour

  • 1/4 cup arrowroot flour

  • 1/4 cup oats (I used a muesli mix)

  • 1/4 cup chopped pecans

  • 1/4 cup chopped walnuts

  • 3 tablespoons maple syrup

  • 3 tablespoons ghee

  • 1 teaspoon baking powder

  • pinch of salt

  • regular or coconut milk vanilla ice cream, for topping

Instructions

  1. Preheat oven to 350 degrees F. Grease a pie or baking dish.

  2. In a large bowl, mix together peaches, blueberries, maple syrup, lemon juice, vanilla, cinnamon, and arrowroot flour. Pour into baking dish.

  3. Mix all the ingredients for the toppings and stir into a crumble texture that sticks together.

  4. Use your fingers to place the crisp mixture evenly throughout the dish on top of the peaches. Place in the oven to bake for 45 minutes.

  5. Serve with or without ice cream! (With!) ;)
