Easy Grilled Seafood Pockets

It’s summertime and the grillin’ is EASY! So let me introduce you to this super fast, zero-cleanup, healthy grilled seafood pocket! It doesn’t get any easier, and if you get creative with your sauces and sides, you could do this dish about a billion different ways. Like you could use cod and sub asparagus for your veggie and choose sweet potatoes. Or you could cook shrimp & sausage and have corn and red potatoes on the side. Your only limitation is your own imagination! So you decide: What fish do I want? What flavor seasoning? What sides veggies do I have? And what starch can I throw in there? And VOILA! You’ve got a magnificent dinner that your people will assume took you hours when it only takes minutes! So now all you have to decide… what fruit do I serve with my ice cream… and… WHAT am I gonna do with all this extra TIME?! :)

Ingredients

  • 4, 4oz salmon or other fish filet

  • 1 1/2 - 2 cups bite-sized potatoes (gold or sweet will work) *cut small to reduce cook time

  • 1 1/2 - 2 cups chopped broccoli (or other veggie)

  • 1 cup barbecue sauce

  • 1 tbsp EVOO

  • salt and pepper to taste

    Directions

    1. Coat your broccoli and potatoes with olive oil, and toss with salt and pepper and any other desired seasonings.

    2. Heat your grill to high. Cut 4 pieces of foil and 4 pieces of parchment paper, roughly 12 x 12 inch squares

    3. Place one piece of parchment paper on one square of foil and top with salmon and veggies. Add 1/4 cup or so of barbecue sauce on top of salmon.

    4. Fold the parchment and foil over the fish and veggies and crimp to make a pocket. Place on the grill and cook for 12-15 minutes or until the salmon is cooked to desired temp and veggies are cooked but firm.

    5. Take everything off the grill, plate and ENJOY!
