Banana Oat Muffins

When you leave town, what do you do with your bananas? Chop them and freeze them for smoothies? Good call! Mine were already a little mushy, but I decided to put them in the fridge, instead of the freezer I put them in the fridge so I could make some muffins when we returned home. Who doesn’t love a good muffin with moist banana filling? We sure do!!

These muffins are a great combo of healthy and treat. They’ve got oats, fruit, sweetness… and served warm with butter, Buddy, I can’t get enough! I feel good about offering them as an after school snack, or a breakfast alternative. They are perfectly sized so that you can eat a perfectly sized single-serving. (Except my husband will eat like 3 in a row and I’m like, “What the HECK MAN?! Save us some muffins!”) Yes, they’re that good.

What’s you’re go-to with over-ripe bananas? Do you like muffins?? Of course you do! Who doesn’t like MUFFINS!?

Ingredients

  • ½ cup honey (can sub maple syrup)

  • ⅓ cup extra-virgin olive oil or coconut oil (melted)

  • 2 eggs, preferably at room temperature

  • 1 cup mashed ripe bananas (+/- 3 bananas)

  • ¼ cup milk of choice (I used oat milk)

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • ½ teaspoon cinnamon, plus more for sprinkling on top

  • 1 ¾ cups whole wheat flour or GF baking flour (I used Bob’s Red Mill)

  • ⅓ cup old-fashioned oats, plus more for sprinkling on top

  • ⅓ cup of your favorite blend in(s): choc chips, berries, nuts, or nothing

  • 1 teaspoon turbinado (raw) sugar or other granulated sugar, for sprinkling on top

Directions

  1. Preheat oven to 325 degrees. (I go +5 for high altitude) Get your muffin cups ready in a muffin tin.

  2. Mix wet ingredients together in a large bowl.

  3. Mix dry ingredients together in a medium bowl.

  4. Fold the flour mix into the wet mix until just fully blended, then fold in your blend in (choc chips, etc)

  5. Fill each muffin cup about 3/4 full. Sprinkle oats, cinnamon and sugar on top. Bake 22-25 minutes or until cooked through and a toothpick comes out clean.

  6. Serve warm with butter, syrup, cream cheese, or plain. ENJOY THE DELICIOUS MUFFINS!!
