I strongly believe there is no ONE nutrition plan that works for everyone. There is so much confusion surrounding what we should be eating. When you’re feeling unsure if you should eat something or not, the question you need to ask yourself is:

“Is what I am eating a nutrient-dense, whole food?” 

We will take a deeper dive into many of the topics that create food confusion. These will include:

Food Psychology and calming practices around food
Intuitive Eating Tips
Macro and Micronutrients
Nature’s Superfoods
Food combining
Making Vegetables the STAR
Gut health
What’s right for YOUR body (Paleo/Whole 30, low carb/keto, low fat, vegetarian/vegan,  and macro counting)

And, of course, I will share some favorite healthy recipes!

Most importantly, know there is no one-size-fits-all approach to YOUR nutrition. We have different genes, different gene expression, different lifestyles, health issues, activity levels, and goals. All of these elements influence what an optimal approach might be, and these factors change over time. The only way to truly know what is best for you is experimentation. We will cover how to go about doing finding your optimal nutrition and offer you support and tips to make nutrition less overwhelming. 

TRUTH: I STILL get overwhelmed by nutrition too, the constant evolution of science surrounding food, and I study this stuff. I get stressed and grab a cookie. Making ourselves aware of our habits is one step in moving closer to healthier eating. But a cookie now and then is what makes life more fun! We will find the balance between what nourishes your body, and what feeds your soul.

Peaches & Pesto Pasta

Imagine the taste of pesto with some cold pasta and peaches, arugula and some creamy goat cheese, and BAM! You know this recipe will be a winner. Maybe someone else has done this one out there on the interwebs, but I feel like I really channeled Half Baked Harvest Tieghan because this recipe is that DELICIOUS. Herb Roasted Chicken & Olives with Roasted Curry Cauliflower

Great news… it’s a TWO for ONE recipe treat in this post. Dontcha love a yummy but simple chicken and roasted veggie combo for dinner? Both of these recipes pack a powerful punch of flavor. These healthy no bake cookies have healthy ingredients. Hemp seeds contain high levels of antioxidants, fatty acids, minerals, and vitamins. Cacao powder is packed with flavonoids and good for lowering blood pressure & reducing insulin sensitivity.

New Mexican Green Chile Fish

New Mexicans looooove their green chiles! And I’m here for it. Bigtime. Good news, the new house we moved into has a “Green Chile Bible.” I haven’t found the chapter on Jesus and the green chiles, but I’m still in the Old Testament, so… The recipes listed are simple. I find you don’t need to do a whole lot to jazz up green chiles. The “bible” calls for cracker crumbs, but I think we all have evolved a bit since the days of Ezekiel, so I went for an upgrade and used GF breadcrumbs.

Healthier Carrot Cake Cupcakes

Another thing that’s fabulous about these carrot cake cupcakes, if that they are filled with fruits (pineapple) and veggies (carrots!) and omega 3’s (walnuts)! Yes! healthier! The first time I made these I used Gina’s recipe from skinnytaste.com. And while her recipe is delicious, I found that using GF flour, 1/4 cup LESS sugar, subbing coconut sugar, and coconut oil, these cupcakes are every bit as mouth-wateringly delicious (if not more!) I hope you try them out because I KNOW you’re going to just LOVE them!

Buffalo Chicken Soup

We still have a few snowy days up here in the Rockies in April and May. Yes, if you didn’t know, New Mexico is still the Rocky Mountain range. Today is one of those spring snowy days. On colder days, I simply want warm comfort foods. Hello instant pot! I love you. And hello spicy buffalo sauce! I love you, too. I think warming my insides makes my outsides feel warm too. This buffalo chicken soup is comfort food for my soul. I sure wish my kids liked spicy food as much as I do. But sour cream (I typically sub Greek yogurt) certainly helps! One day I’ll have them loving spicy foods that make your nose run and your eyes water. I mean, what’s not to love about that? Enjoy this warm comforting soup and let me know what you think!
