Super Easy Sweet Potato and Brussels Hash

INGREDIENTS

  • 1 lb Italian Sausage

  • 1 medium sweet potato, cubed small (2 cups)

  • ½ lb. brussels sprouts, quartered (2 cups)

  • 1 bell pepper, diced large

  • ½ small red onion, sliced

  • 2 garlic cloves, minced

  • 1 cup Craisins

  • about 1/2 green and 1/2 red (honey crisp or pink lady) apple, peeled and diced

  • 1 Tbsp. ghee or butter

  • 2 TBSP dijon Mustard 

INSTRUCTIONS

  1. Brown sausage in a skillet on medium high heat, about 10 minutes. Once cooked through, transfer to a paper towel-lined plate.

  2. In the same skillet on medium heat, add sweet potatoes and Brussels sprouts. Cover and cook for 5-10 minutes then uncover and cook for another 5 minutes stirring occasionally throughout the entire time. If veggies begin to stick, add ghee to grease the skillet.

  3. Once potatoes are fork tender, add peppers, onion, apple, and garlic to the skillet and cooked uncovered for 8-10 minutes.

  4. Stir back in the sausage, and add mustard & Craisins heat through, and serve.
