Quick Leftover Turkey Salad

What to do with that leftover turkey? Don’t let it go to waste! My brother-in-law cooked a spatchcock turkey this year- low and slooooow on the grill. This turkey was finger lickin’ good-luck-not-biting-your-fingers-off GOOD. I know it was quite the process so I feel hashbrown-blessed that I got to taste that bird. NO WAY I’d let that deliciousness anywhere near the trash. You have lots of options for turkey, and this turkey salad option will not disappoint! I didn’t have onion, didn’t miss it. In fact, I think I liked the sweetness of this version. I used green apple for the tang, grapes, pecans, and stone ground mustard and it was the perfect mix. You could always do this with chicken if that’s what you have on hand. We were out of mayo too, and the Greek yogurt sub hit all the spots! Bornupatree!

INGREDIENTS

  • 3 cups leftover turkey (I like a mix of white and dark meat)

  • 2 Tbsp plain Greek Yogurt

  • 2 Tbsp Stone Ground or Dijon mustard

  • ½ cup chopped celery

  • ½ cup sliced grapes

  • ½ green diced green apple

  • 1/3 cup chopped pecans or walnuts

  • ½ tsp salt

  • ½ tsp garlic powder

  • ¼ tsp black pepper

INSTRUCTIONS

1.  Chop up all your ingredients. 

2. Add your wet ingredients to the turkey and celery and mix well.

3. Add spices and then grapes, apples, and nuts. Stir and taste to see if it needs more salt, pepper or mustard.

4. Serve on toast, on salad greens, or top with cheese and make it a turkey salad melt! Enjoy.
