Quick and Easy Stir Fry

Do you stir fry? Listen up, sister! There are a multitude of reasons why stir fry should be in your dinner rotation.

1. It’s an easy way to get a good amount of veggies in.

2. You can whip up this dish start to finish in about 15-20 minutes (depending on how fast a veggie chopper you are!)

3. You can use whatever veggies you have.

4. Frozen cauliflower rice is a GAME CHANGER.

5. You can taste and add more seasoning (coconut aminos) at the end, if needed!

6. You can swap out proteins OR have it as a meatless dish.

7. It is a colorful and beautiful dish, especially when you add some purple cabbage or red peppers.

And finally,

8. IT’S NOT MEXICAN. (I cook a lot of Mexican, ok. Delicious and easy so, let’s just let it slide. K?)

Do you stir fry? Why do YOU stir fry? What’s your favorite go-to ingredients in stir fry?

Ingredients:

1 Tbsp Avocado or coconut oil
2 or 3 whisked eggs
1 Tbsp grated ginger (can sub 1-2tsp root powder)
1 Tbsp minced garlic
1-2 cups chopped broccoli 
½-1 cup chopped/grated carrots
1 cup peas (I use frozen)
Any other veggies you want to throw in there like colored peppers or purple cabbage!
½ cup green onions (or yellow)
2-3 cups shredded chicken or shrimp or ground beef
1-2 bags frozen cauliflower rice (or 4 cups cooked white rice)
1/3 cup coconut aminos (more to taste)
2 tsp toasted sesame oil
½ tsp sea salt (if needed)
½ tsp red pepper flakes (opt)
Chopped cilantro & hot sauce/sriracha for garnish

Instructions:

  1. Add avocado oil to a large nonstick pan over medium heat and cook whisked eggs and set aside.

  2. Add sesame oil to pan and cook ginger, garlic, and onion until fragrant about a minute.

  3. Add veggies and cook 3-4 minutes until softened.

  4. Add protein and stir to combine, sauté a couple minutes. (If using chicken or ground beef, cook those first, before the eggs, then add back to the pan here. Shrimp can remain raw until this step.)

  5. Add cauliflower rice, coconut aminos, salt (if needed), pepper flakes and cook 5-6 minutes stirring occasionally.

  6. Taste and adjust seasoning then remove from heat and serve. Garnish with cilantro and sriracha or more green onions.
