Paleo Zucchini Chocolate Chip Muffins

Ingredients:

  • 2 large egg whites

  • 1 cup finely ground almond meal (I like Bob’s Red Mill superfine)

  • 1/2 cup unsweetened cocoa powder

  • 1 teaspoon baking soda

  • 1/4 teaspoon kosher salt

  • 1/2 cup unprocessed raw honey or maple syrup

  • 1 cup grated zucchini, not squeezed

  • 1 teaspoon vanilla extract

  • 3/4 cup semisweet chocolate chips (optional)

Instructions

  1. Preheat the oven to 325°F. Line 12 muffins with muffin liners or spray.

  2. In a medium bowl, whisk the egg whites. Add in grated zucchini.

  3. In a large bowl, whisk together the almond flour, cocoa powder, salt, and baking soda. Add the zucchini and egg whites and stir with a spatula. Add the honey and vanilla and stir with the spatula until combined. Fold in the chocolate chips. Scoop the batter into the prepared muffin liners. 

  4. Bake for 25 minutes- check that toothpick comes out clean, if not add another 4-5 minutes. Let cool and serve.
