Instant Pot Cashew Chicken with Cauliflower Rice and Steamed Broccoli
Another quick and easy weeknight dinner the kiddos will enjoy too! I adapted this recipe from wholekitchensink.com. It’s one of those recipes that you could add little tweaks and put it on your calendar for a regular spot in your dinner rotation. The sweet and salty combo are just the perfect balance with the rice and broccoli. The crunchy mix of both broccoli and cashews are a nice texture with the saucy chicken. This meal is filling, and the dinner makes for great leftovers for lunch tomorrow. I might not put an egg on this one and call it breakfast though. Enjoy!
INGREDIENTS
2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
2 tbsp sesame oil, divided
1/2 cup coconut aminos
3 tablespoons ketchup
4 tbsp rice vinegar
1 tbsp coconut sugar
1 1/2 tbsp honey
1 tbsp minced garlic or ½ tsp root powder
1 tbsp minced ginger
3 tbsp arrowroot flour, divided
1/2 tsp Chinese Five Spice
1/2 tsp red pepper flakes, or to taste
1/4 tsp salt, or to taste
1/4 tsp pepper, or to taste
2 tbsp water
1 cup raw cashews
2 bags frozen cauliflower rice
½ tbsp lime juice
2 heads broccoli, cut bite sized
Green onions and/or sesame seeds for garnish
INSTRUCTIONS
1. In a bowl, combine 1 TBSP sesame oil, coconut aminos, ketchup, vinegar, coconut sugar, honey, garlic, ginger, Five Spice, and red pepper flakes. Whisk and set aside.
2. Coat chicken pieces with 2 TBSP arrowroot and some salt and pepper. Toss well.
3. Heat 1 TBSP sesame oil on saute in instant pot. Sear chicken for a couple minutes. Place lid and set to seal, and cook on manual 10 minutes.
4. Once timer goes off and you release steam, stir together 2 TBSP water and 1 TBSP arrowroot powder and mix well. Add to chicken and stir for sauce to thicken. (Add more arrowroot if it’s not thick enough.) Add cashews and stir.
5. Cook cauliflower rice according to package, season with salt and pepper and lime juice. Meanwhile, steam broccoli.
6. Plate rice, broccoli, cashew chicken and garnish with green onions and red pepper flakes. Enjoy!
