Basil Whipped Goat Cheese
A friend invited me to dinner when my husband was out of town, praise the Lord for people who understand that struggle and step up! And I asked what I could bring. I got the standard, “Not a thing, dear.” But I know better. Every southern-born and raised child knows your mama will disown you if you show up to someone’s house empty handed! And I love my mama so I’m just not gonna.
So here is what I knew: I had a couple hours to whip something up and get ready. Forget about trying to bathe my dirty grommets. Note to self: ask someone what age kids want to start bathing again. Gee whiz I have to beg and plead! Anywho, so I had some goat cheese and I had some fresh basil and a food processor. TWO MINUTES Y’ALL! And I didn’t have to show up empty handed! The host loved it, thanks Jan! And asked for the recipe. And I was like, “You want all 3 ingredients?” She said to post it online and here it is. So if you’re ever in a pinch, remember this 3 ingredient dip, and you’ll never have to break your mama’s southern heart with your lack of good manners. xo, D
Ingredients
4 ounces goat cheese, softened
1/2 cup packed basil
1 clove or 1 tsp minced garlic
Optional add ins:
2 tsp lime juice
1 tsp red pepper flakes
1 tbsp honey
salt & fresh cracked pepper
Instructions
Place all ingredients in a food processor and pulse until well blended.
Scoop it onto a serving dish and go get dressed for the party. Maybe bring along some sliced tomatoes or crackers for serving.
